The Umstead Hotel and Spa in Cary, NC, considers its Hibiscus Yuzu Tea the signature energy-enhancer. According to the hotel, besides being a good alternative to a morning cup of coffee, the sour-flavored flower (it tastes similar to a grapefruit) aids in cardiovascular health, contains a high amount of vitamin C and leaves skin looking refreshed.

Recipe:
1 qt. Hibiscus Flowers, dried
12 qt. Water
4 ea. Cardamom Pods
2 tsp. Pink Peppercorns, whole
1 tsp. Coriander, whole
1 stp. Fenndel Seed, whole
½ ea. Cinnamon Stick
5 ea. Cloves
Golf ball sized Ginger (peeled)
1½ c. Yuzu Juice
2 c. Mirin
24 oz. Pomegranate Juice
TT Salt

Preparation: Place all aromatics and hibiscus flower into a 22 quart cambo. Heat the water until boiling and pour over the aromatics. Let the tea steep in the cooler overnight. The next day, flavor with the yuzu, mirin, pomegranate juice and salt. Be sure to strain the elixir before serving.
