From hair and nails to makeup and beyond, the unicorn trend has pretty much taken the world by storm. It seems like everywhere you turn there’s a new iteration of the pastel-colored, glitter-laden sparkle movement and there’s no end in sight (not that we’re complaining).

And now the idea of unicorn everything has trickled its way out of the beauty sphere and into the world of food.

Unicorn Toasts

Avocado toast was so last year. Right now it’s all about unicorn toast, which uses plant-based vegan cream cheeses and spreads mixed with algae, spirulina, cholorophyll, beet juice and tumeric for an ombré pastel hue when layered on top of toast. Top with sprinkles (natural, sugar-free ones of course) and gold leaf to really give your toast the unicorn effect.


Unicorn Lattes

Using crystal-infused water, this latte puts your average coffee drink to shame. Besides the fact that unicorn lattes are pretty to look at, they’re also loaded with good-for-your-body ingredients like mushroom, maqui, ginger, turmeric and e3 live to provide a sense of healing and well-being from the inside out.

Always wanted to eat like a unicorn? Now's your chance. Check out this Shakeology unicorn bark recipe to fulfill all of your wildest rainbow and glitter-filled fantasies, but without the guilt. Vanilla Shakeology Unicorn Bark Total Time: 2 hrs. 20 min. Prep Time: 20 min. Cooking Time: None Yield: 6 servings Ingredients: Parchment paper 2¼ cups reduced-fat (2%) plain yogurt, divided use 3 scoops Vanilla Shakeology, divided use 4½ tsp. raw honey, divided use ½ cup chopped medium strawberries ½ cup fresh blueberries ½ cup chopped mango (or pineapple) ¼ cup + 2 Tbsp. unsweetened shredded coconut Preparation: 1. Line 13 x 9-inch pan with parchment paper. Set aside. 2. Place ¾ cup yogurt, 1 scoop Shakeology, 1½ tsp. honey, and strawberries in blender; cover; blend until smooth. Place in a medium bowl. Set aside. 3. Place ¾ cup yogurt, 1 scoop Shakeology, 1½ tsp. honey, and blueberries in blender; cover; blend until smooth. Place in a medium bowl. Set aside. 4. Place remaining ¾ cup yogurt, remaining 1 scoop Shakeology, remaining 1½ tsp. honey, and mango in blender; cover; blend until smooth. Place in a medium bowl. Set aside. 5. Place large dollops of strawberry mixture randomly around prepared baking sheet. Repeat with blueberry and mango mixtures, making sure dollops are touching. 6. Gently cut through yogurt mixtures with a knife in a circular motion to create marbling. 7. Sprinkle top with coconut. Cover with plastic wrap 8. Freeze for 2 hours, or until firm. 9.
