Celeb chef Robert Irvine makes delicious meals day in and day out but the one thing he’s asked about the most isn’t for his recipes—it’s how can he constantly be around food and not gain weight?

A valid inquiry of most chefs who make their livelihoods with food as their sidekick. Granted, Irvine is also incredibly fit and also has his hand in the world of health and fitness with a regular column in Muscle & Fitness magazine, a 2015 book, Fit Fuel: A Chef’s Guide to Eating Well, Getting Fit, and Living Your Best Life, and, most recently, the launch of a new talk show, which will deal with such topics as losing weight. (One guest of the show is a previously 432-pound man who is on a path to lose almost half his body weight by end of January.)

But, as reported on by Delish, Irvine’s answer to the pressing question doesn’t necessarily come back entirely to focus on fitness, but rather, dieting—just not in the way you think.

“I don’t believe in diets. Never have, never will,” Irvine told Delish. “I believe that if we eat in moderation, and we eat different types of food at different parts of the day, our diet and our weight will be controlled. Smaller meals, more frequently—that’s the way we train our military, that’s the way we train our athletes.”

Irvine also stresses that portion control is a huge problem and advises going big on fresh vegetables, but limiting meat to the “size of a deck of cards” and carbs to the “size of your computer mouse.” As part of concentrating on portion control, Irvine says you really should be eating every two-and-a-half to three hours.

Among his other tips: Don’t worry too much about “not eating before bed,” make at least a 20-minute commitment per day to exercise in a way that raises your heart rate, and, of course, cut back on sugar.
