There’s no doubt about it—vitamin D is important. We need it to support good bone health and muscle strength, maintain our teeth, prevent hair loss and even limit weight gain. Previously we’ve gotten our vitamin D fix from soaking up some (potentially dangerous) sunshine and taking supplements. Now, researchers at the Boston University School of Medicine are saying that there’s another way to get your dose of vitamin D: the mighty mushroom.
Researchers found that eating mushrooms that contain Vitamin D2 helps you increase and maintain Vitamin D levels as much as taking a supplemental vitamin. Not only do mushrooms provide you with vitamin D2, but also they’re a good sources for vitamin D3 and D4.
Maybe now, you can justify ordering a pizza—with mushrooms. For a healthier alternative, incorporate grilled mushrooms into a summer BBQ as a side dish or on a roll, in place of meat. Barbecue Seasoned Mushrooms
Serves: Makes 4 (1/2-cup) servings
Ingredients: 3 tablespoons vegetable oil; 1 tablespoon Barbecue seasoning (like McCormick Grill Mates Barbecue Seasoning); 1 pound whole white mushrooms, stems trimmed, quartered
- Directions: Mix oil and seasoning in large bowl. Add mushrooms; toss until evenly coated. Place in perforated, metal grilling basket. (A large sheet of heavy-duty aluminum foil can be used in place of the metal grilling basket.)
- Grill over medium-high heat 10 minutes or until tender and evenly browned, stirring occasionally. Season with salt and pepper to taste, if desired.
