How do you order your eggs? Just the whites? You may want to reconsider. Researchers from the University of Alberta recently discovered that egg yolks’ antioxidant properties might help prevent heart disease and cancer, not cause it.
Eggs are a well known source of proteins, vitamins and minerals, but less known for containing antioxidant properties (that help prevent cardiovascular disease and cancer), due to two amino acids: tryptophan and tyrosine. Researchers found that two raw egg yolks have almost twice as many antioxidant properties than an apple and about the same as a half serving of cranberries. Cooked eggs, on the other hand, reduce antioxidant properties by half. However, although it is a big reduction, cooked eggs are still equal to apples as far as antioxidants are concerned.
The study’s researchers expect to find even more antioxidant properties in eggs as they continue analysis. Previous research shows that egg proteins actually lower high blood pressure. Will this news change how you will order your eggs?
