Day 3: 114 pounds

When I woke up this morning, my fiancé told me he ate one of my S’mores snack bars after I went to bed last night. I asked him what he thought, and he said it tasted just like a Luna bar. (I don’t think he knows those are designed for women!)

OK, so one pound down- I can’t really see a difference, but I’ve noticed a complete lack of bloating (which may be due to the fiber supplements I take) and my tummy is pretty flat.

The Mushroom and Spinach Omelet with Peach Oatmeal was a great way to start the day, though I’m still having trouble eating the entire breakfast.

Eggplant is one of my favorites, so I was looking forward to the Eggplant “Pyramid” with Italian Tomato Sauce and Seasoned Garlic Broccoli Spears. All I can say is de-lish! It was essentially eggplant parm with layers of ricotta, and the broccoli was very flavorful (i.e. garlicky)-much to the chagrin of my coworkers!

A little bit of Thanksgiving in the summer- Tonight was Roasted Turkey Breast with Baked Sweet Potato and Honey-Balsamic Baked Red Onion Wedge. The turkey was yum, especially in the “natural gravy,” but I was tempted to put some butter on my sweet potato (I didn’t). There was something about the onion that I didn’t like, so I skipped it.

After I got home from meeting a friend for a drink, I had a banana. I’m sure alcohol isn’t allowed, but oh well. I don’t think one cocktail will derail the entire diet.
